Prepare the dough
In a saucepan, heat 50 g of almond powder with stevia, water and oil for 2 min.
Add Diabemix flour and mix it.Shape a ball and cover with clingfilm.
Leave in the fridge for 1h.
Prepare the topping
Peal the apples, cut them in 2 cm cubes. Cook them slowly in a pan, with all ingredients except the eggs, until the apples get soft.
Add the eggs and dry fruits once the preparation cooled down.
Preheat the oven at 180°C.
Divide the dough in 4 pieces and shape flat discs between 2 layers of baking paper.
Grease 4 tartlet tins and put the dough inside. Prick with a fork and bake only the dough for 5 min.
Spread the apple preparation on the prebaked dough, and bake for 25 min more.
Put some lemon zest on top of the pies while they are still hot!
